Everything that goes into chicken salad except chicken!
Ingredients:
- 2 cans drained and rinsed beans (white beans, or garbanzos)
- 2 stalks celery diced
- handful chopped spinach
- 2 tbsp sunflower seeds (optional)
- 1 apple diced small
- 1 onion diced
- few dill pickles diced
- mayo, use vegan brand if vegan
- yellow mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tbsp honey or maple
- capful apple cider vinegar
Directions:
Drain and rinse beans, smash really well ( a few broken bigger pieces are fine, gives it some texture). Add all the other ingredients, mix well and enjoy on THM Panbread , Wraps, Sprouted Bread, Cucumber boats, Lettuce Wrap..by its self with a spoon!!
