I love this soup so much! I could eat it at least two times a week. We always make this without the meat and my children and husband have it over rice. I like it just how it is. Either way, its filling and cheap and fits nicley into the Trim Healthy Mama Lifestyle.
Ingredients:
- 2 lb cooked lentils
- 1 cup ground turkey or chicken breast
- 1-2 cans lite coconut milk or full fat if your in maintenance mode or nursing a little to make this a THMxo
- 1 box of broth vegetable, chicken, or bone broth
- 2 sweet potato
- carrots 2-shredded
- 1 cup fresh spinach chopped, or squash variety
- onion 1-diced or leave out if your nightshade free (optional)
- garlic cloves or garlic powder (optional)
- 2 tbsp coconut oil
- 1 tbsp turmeric
- 2 tsp cinnamon
- salt/pepper
Directions:
- In a LARGE pot on medium high- heat up coconut oil with garlic, and onion , cook a few minutes.
- Add lentils and cook til nutty smell.
- Turn down to medium, now add all the vegetables and cook a few more minutes.
- Add 1 and 1/2 cans of coconut milk and broth.
- Stir in Turmeric, Cinnamon, Salt/Pepper, bring back to a boil.
- Add in chicken breast or ground turkey
- After it has started boiling , turn down to a simmer cover with a “tilt” and stirring here and there, letting the soup cook for about 25-30 minutes until the lentils and vegetables are tender.
- Serve Warm with additional swirl of coconut milk from 1/2 can left.
You can use cooked, or soaked lentils in place of dry.
