Great recipe for all the dishes you love that call for tomatoes! I do not get heartburn or stomach pain, indigestion/heartburn from this sauce. It tastes the best when you use lots of spices (handful of fresh basil for each batch) I also love it the most with beef cooked in, it helps the flavors. I use the beef mixture to top my pizzas & spaghetti. Adjust to your desired taste.
Ingredients:
- 5 medium carrots
- 1/2 onion
- medium beet
- handfuls of fresh basil
- 2 cups water or broth
- 2 tsp oregano
- 3/4 tsp salt
- 1/2 tsp pepper
- 3/4 tsp garlic powder
- 2 tbsp olive oil
- (1/4 cup nutritional yeast) optional /adds cheesy flavor.
Directions:
- Chop carrots, peel beet and wrap in foil.
- Sprinkle with salt and a drizzle of olive oil and bake at 350 for 30-45 minutes.
- In the meantime, caramelize your onions, raw will work too if you want to skip this step.
- Add cooked carrots & beets, onions, handfuls of basil( about 2) all seasonings+ nutritional yeast and 2 cup of water or broth to a blender.
- Puree til smooth
- Pour the sauce into a large pot, stir and bring to a slow boil over medium heat.
- Reduce heat and continue cooking for about 20 minutes. Stir occasionally.
- Remove from heat and adjust flavors.
